The coffee

The red honey process brings a extra complexity to this high renowned Yirgacheffe coffee, with juicy sweet tropical notes. 

Farm/Producers

The Yirgacheffe region is renowned for producing coffee with delightful floral and fruity notes, thanks to its rich volcanic soils, high altitudes, and diverse coffee varietals. Coffee grown in Yirgacheffe has long been considered to be of the highest quality and in high demand.

Handpicked from the surrounding region, these coffee cherries are carefully delivered to the Tulisi washing station for processing. At this facility, the cherries are meticulously sorted and graded based on their varying levels of natural sugars.

The process

 

This particular Ethiopia Tulisi, Yirgacheffe coffee undergoes a unique red honey processing method. Unlike most Ethiopian coffees, the sticky fruit pulp is intentionally left on the coffee beans during the drying process. This allows the coffee to develop more complex flavors and a richer body, resulting in a sweet and fruity taste. The beans are carefully tended to by farmers, who rotate them frequently to ensure even drying. Additionally, the beans are kept in the shade to slow down the drying process, which further enhances the coffee's unique characteristics.

Why we like it

Generally speaking there is everything to like about Yirgacheffe coffees, in this case the red honey processing has just added another layer of supreme flavour. Making it easily enjoyable for either espresso or filter brewing.
