The coffee

From a incredible highly regarded farmer, excellent producer, and famous region of Ethiopia this coffee lives up to all its wonderful credentials.

Farm/Producers

Lunke Zegeye Daychew is a young coffee producer from the Sidamo region. He joined the coffee business in 2013, following his family's footsteps, and has achieved recognition by placing well in the global 2024 Cup of Excellence awards. His farm, Leikun, is located within the Sidama region of Ethiopia, surrounded by natural forests that create a beneficial ecosystem for coffee growth and provide a food source for the local community.

In the Sidama area, the Shantawene washing station offers facilities for local farmers like Lunke to process their coffee and prepare it for export. The Shantawene village is a vibrant community cooperative. Many coffees processed here are labelled as Sidamo Shantawene coffees upon export due to the station's well-known excellence in processing.

The process

This is a naturally processed coffee, also known as dry-processed. The fruit pulp remains on the coffee during this traditional method, and the coffee cherries are dried whole.

Lunke ensures strict control over how he grows, picks, and dries his coffee, ensuring optimal flavours in the coffee. Lunke skins his coffee within 6 hours of harvesting and provides optimal airflow while the coffee dries on African beds, preventing mould and unwanted fermentation.

Once dried, the coffee is sent to the Shantawene washing stations, where the pulp is mechanically removed, and the coffee is prepared for export.

Naturally processed coffees are known to have mild fruity notes, good body, and lower acidity.

Why we like it

With all of our favourite fruity, floral coffee flavours present, this Ethiopian coffee is truly delightful. The natural processing enhances its sweetness and brings a fruity brightness to every cup. Its low acidity and full body make for a pleasant, smooth espresso with a sweet chocolate notes defining the body. Whilst filter brews highlight more the tropical red-fruit notes.
