THE COFFEE
Gone are the days when decaf was deemed unworthy by roasters and frowned upon by specialty baristas. With meticulous sourcing and careful roasting, decaf coffee like this lot is just as exquisite as its caffeinated counterpart.
FARM/PRODUCER
This coffee is a selection of both caturra and castillo coffee varietals, grown by small-lot producers of the picturesque Cauca region in Colombia. The secured lots are then transported to a sugarcane processing centre in Colombia to be decaffeinated using a 'sugarcane' process.
THE PROCESS
The sugarcane process, founded in Colombia consists of the following steps:
- Sugarcane is processed to produce molasses, which is further fermented to produce ethanol.
- the alcohol produced by ethanol, is mixed with a natural acetic acid, which creates a solvent of sorts.
- the coffee emerged in water, and mixed with the solvent which works to increase the coffees water content and absorb the caffeine released from the coffee.
- the beans are then further washed, steamed and dried, to a optimal moisture content suitable for shipping and roasting.
- This process is successful in removing around 97% of the caffeine content.
The result is a very chocolaty earthy smelling green coffee, and a smooth sweet
WHY WE LIKE IT
This decaf coffee is a pleasure to roast, mostly due to the unique earthy, coco-pop aroma of the beans. It has a delicious flavour, with good body, and a super smooth finish. A perfect coffee to be enjoyed at anytime of the day or night.
