THE COFFEE

This African coffee, is grown by various small-lot holders of the Kayaza region of Burundi. With bright clean flavours,  this coffee delivers a delightful espresso or filter brewed coffee with juicy citrus notes, and barley sugar like sweetness. 

THE FARM / PRODUCERS 

The name Inyambo, which comes from the impressive Inyambo cattle, represents wealth in Burundi. Burundi's coffee industry is mostly run by small-scale farmers, but it has gained recognition for its exceptional quality. Upgrading coffee infrastructure could bring about a significant transformation in the nation's economy. Washing stations play a crucial role in improving the overall taste and perception of Burundian coffee. Both state-owned and private companies are responsible for managing the industry, contributing to its growth and influence.

THE PROCESS

Smallholder farmers typically harvest 200-300 kilos of cherry annually from about 250 trees. Cherries are hand-picked and can be delivered directly to washing stations or collection sites. Quality assurance begins upon delivery, with wet processing supervised throughout.

This is a washed process coffee. During this method the ripe coffee cherries are harvested, de-pulped, and washed, removing all fruit pulp surrounding the coffee beans. The coffee is then placed on sun-beds to dry-out the coffee beans, until they reach the optimal moisture content of 11%. 'Washed Coffees' are know to have clean and balanced characteristics, this process often promotes higher acidy in coffee, and showcases the coffees varietal, origin and the environmental growing conditions from which it is formed.

Removing all the pulp surrounding the coffee, before it dries, eliminates the chances of fermentation occurring which can altering the coffees original organic structure.
